Breakfast and brunch are my favorite meals. I feel that that is what the weekends are for - leisurely breakfasts at a quite table with lots of natural lights and warm voices around you.
I just love the kitchens and kitchen tables in the images below. When I own a house one day I would like to create a space like these.
Speaking of brunch or breakfast, I saw a great french toast recipe on the wonderful food blog Spoon, Fork, Bacon. Below a recipe for banana bread french toast off their blog. Hope you enjoy!
Ingredients:
1.) 1 recipe chocolate chip-coconut banana bread, sliced into 1/2 inch thick slices
2.) 3 eggs, lightly beaten
3.) 1 cup milk
4.) 2 teaspoons vanilla extract
5.) 1/2 teaspoon ground cinnamon
6.) 1/8 teaspoon ground nutmeg
7.) 2 cups cornflakes, finely crushed
8.) 1/4 cup butter, softened and divided
9.) 1 banana, peeled and sliced
10.) maple syrup
Directions (serves 3 to 4):
1.) Allow banana bread to dry out slightly in open air for about 1 day (you can also place the slices on a baking sheet and place in a 200 degree F oven for about 3 hours)
2.) In a shallow dish whisk together the eggs, milk, vanilla, cinnamon, and nutmeg. In another shallow bowl, add the crushed cornflakes.
3.) Dip each slice of bread in the egg mixture then dredge each piece in cornflakes until completely covered.
4.) Place a large nonstick pan or griddle over medium heat and melt 2 tablespoons butter.
5.) Cook French toast on each side for 3 to 4 minutes or until golden brown and crisp.
6.) Drain on paper towels for 1 minute before plating and serving with sliced bananas and maple syrup.
